The Zoo

We went to the zoo today to meet with a friend of mine from my mission on Temple Square. I haven't seen here for 6 years....it was fun to see her and take the kids to the zoo. You know I now have my feel of the zoo for the next 2 years....I can only take it a little at a time! :) Enjoy the pictures. It was a beautiful day!



We let Sienna walk, which apparently we dont do enough...this was the crazy result! Ha! Hilarious! She is out of control!

Sewing adventures.....


I have been trying to sew dresses for the girls for the baby blessing. Each one comes closer and closer to being decent. This one is wearable. :) It is Sienna's. Much cuter than the last one I made....I am getting better. :)

Fun in the sun...



The girls had fun outside on the slip in slide for the first time this year. The weather was so nice, almost 80. It was hot outside, but the water was still freezing cold. :) At least they had fun. It was the last nice day for a week or so.....next week is 50-60s and rainy....at least for the next four days or so. Oh well, it was fun for a bit.

Strawberry Truffles...Delightful!



If you have been reading my blog, you would have seen the mint truffles I made for practice...for Jackie's wedding. Today I tried strawberry since Oreo came out with a yummy "limited" strawberry shake oreo. They turned out actually pretty good. I made some in white chocolate and some in regular then decorated the outside. The insides are all the same. :) Yummy liscious. If you dont feel like searching for the recipe in past blogs...here is the recipe for this one:

1 pkg strawberry oreos
1 pkg cream cheese
1/2 block chocolate almond bark
1/2 block vanilla almond bark

Crush up oreos in food processor, mix in softened cream cheese. Roll into balls (small) and refrigerate. After hardened, dip in your choice of almond bark..let harden, then decorate top with opposite almond bark. (For these I colored the white with a hint of pink to put on the chocolate)If you make them small and use mini cup cake papers....it makes 70!!!!! :) Yum...just the right size too, so you dont eat a big chunk. Enjoy.

Happy Easter!

Here comes Peter Cotton Tail, hopping down the PG trail.....yep, he hopped to our house last night so we could have fun today, then celebrate what Easter is really about on Sunday. Yesterday I explained to Jayda why the Easter bunny was "requested" to come early to our house...that it really has nothing to do with Easter and Jesus. I explained to her Good Friday, then the 3 days until his Resurrection. She knew all that, and kept asking what the Easter Bunny and eggs had to do with it? I said...nothing.....that is why we do it the day before. She said, "well maybe finding eggs is like finding Jesus." :) Well, perhaps. :)

Last night they knew the bunny was coming, so Jayda had a hard time going to sleep. She said she couldnt go to sleep because she was afraid the Easter bunny would come in there and touch her and wake her up. :)Ha! After Nelson assured her that wouldn't happen, she fell asleep. :) This morning they awoke to hidden eggs and full baskets. They were so excited to hunt for eggs, they made us hurry and get up and come out in the living room. Halle asked how the Eater bunny gets in our house. "Does he hop on the walls, or what?" She said! Ha... Kids are so funny. What a fun age and a blessing to enlighten our lives with their humor and naivity. The girls played with their Easter baskets all morning.... Sienna went to town just eating candy for breakfast without anyone stopping her. She was in hog heaven. Nevermind her outrageous fro! Haha!:) They loved eating the boiled eggs, and even though they ate those, I tried a new mini quiche recipe out. It turned out pretty good. Have fun with kids, bunnies, and candy, but know that the truth of the season is, Jesus Lives. He really died for us and was resurrected, as we all will be someday. Whether you believe it or not, it is a fact. He loves us and truly wants us to be happy. Happy Easter everyone! Here is the recipe if anyone is interested.



Mini Hash Brown Crusted Quiche with Crisp Maple Brown Sugar Bacon

12 strips Applewood Smoked Bacon
¼ Cup pure maple syrup
½ Cup brown sugar

2 Tablespoons extra virgin olive oil
1 package Ore Ida Seasoned Hash Brown with Peppers, thawed
15 large eggs
½ Cup heavy cream
1 ½ teaspoons salt
½ teaspoon pepper
¼ teaspoon garlic salt
1 Cup shredded cheddar cheese
1. Preheat oven to 350 degrees F. Place bacon strips onto a baking rack placed over a baking sheet. Brush each strip of bacon with maple syrup then press pinches of brown sugar over each strip. Bake for 35-30 minutes or until crisped. Remove and let cool. Once cooled, cut into ½ inch pieces. Set aside.
2. Heat olive oil into a large 5 qt skillet or dutch oven. Saute hash browns until slightly golden. Spoon a heaping Tablespoon of hash browns into 48 mini muffin cups that have been sprayed with cooking spray. Bake for 5-7 minutes then remove from oven. In a large bowl whisk the eggs, cream, salt, pepper and garlic salt until well combined. Fill each muffin cup nearly full with eggs. Top with a pinch of cheddar cheese and bake for 15-20 minutes, or until eggs are cooked through. Remove from muffin tins, top with crisp bacon pieces and serve warm.

Breakfast Casserole Muffins?


I dont exactly know what to call these, but yummy. I am trying out different things for our baby blessing on the 30th of May, and I tried these today. I think next time I will try them with different ingredients, the possibilities are endless. :) Today I tried them this way:

2 cans of reduced fat crescents
1 pkg of Jimmy Dean turkey sausage
1 cup of cheddar cheese
6 eggs
4 tsp milk ( i just realized I forgot, but they came out anyways)

Mix all ingredients in a big bowl for filling. (except crescents)Place crescents in a muffin tin with the widest side down Really the widest part should be in the tin leaving two long ends hanging out. Fill almost full, not too because it will overflow. Then take two longest tips of crescents, twist together and lay on top. Bake in oven at 350 for 23 minutes or until golden brown.

Low fat could be egg whites, reduced fat cheese, turkey sausage, bacon, or ham, anything..you could put veggies in..yum.....my new favorite breakfast. :)
